My daughter has Celiac. She was diagnosed when she was 3. She's 13, now. It's amazing how awful, and sparse, the gluten-free choices were in those early days and it's amazing how good they are, now. In our town, we can have gluten-free pizza delivered to our home from 3 different places and you'd be hard-pressed to tell the difference from the stuff with gluten.

Tried to make one last week and failed miserably. Think I need some Xantham gum, whatever the fuck that is. UK pizza delivery is shocking mate. My local sells pizza, burgers, curry, chips and kebab.. You know it isn't gonna taste like it should!

Yeah, Ben. Xanthan gum is they key because it's basically imitating what the gluten does, which is binding everything together. The texture is better. Maybe try different flours (or blends), as well.
We can get GF cakes for her birthday, made by a woman nearby, that are some of the best cakes I've ever had, gluten or no.

When I lived in London I couldn't even get pizza delivery until I went and introduced myself. Evidently I didn't live in the nicest area.

Had a bit of a crazy week. Took the most part of it to recover from this crazy 9 mile run that I did for charity last Sunday.
It was insane!!! in the video shows some of the craziest parts from about 1.45 onwards.

As soon as the LAST pair is out of my storage unit (I no longer keep them in my home, they stink up the place)

Does Spelt flour have the same type of gluten in it?

Spelt flour also has gluten in it. The way I understand it is, if you have a wheat allergy you can (or may be ale to) have spelt flour. But you can't have it if you have celiac disease.
